Instructions
- Beat together cream cheese, sugar and lemon juice until creamy and set aside.
- Hollow out the top of each strawberry with a paring knife to make a shell.
- Move the cream cheese mixture into a pastry bag. Using the pastry bag, fill each strawberry just slightly above the tops with the mixture. Place the filled strawberries on a cookie sheet.
- Dip filled strawberries into a bowl of graham cracker crumbs and place back on cookie sheet. Refrigerate to chill and set.

- Preheat oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper.
- Combine oats, oat flour, baking powder, baking soda and salt in a large bowl.
- Beat the butter and sugars together in a large bowl with a mixer on medium speed until fluffy, about four minutes. Reduce the speed and beat in the egg, egg yolk and vanilla until smooth, about two minutes. Add the flour mixture, walnuts and dried apricots to the bowl with a spatula and stir until fully combined.
- Scoop the dough into 13 balls (1/3 cup each). Arrange the cookies three inches apart on the baking sheets. Bake for eight to 10 minutes, until the edges are golden and the center soft.
- Let cool on the baking sheets and then transfer to plate to enjoy.

- Preheat oven to 375 degrees Fahrenheit and lightly grease a muffin tin.
- Prepare flax egg in a large mixing bowl and let set for five minutes. Add banana and mash, leaving a bit of texture.
- Add brown sugar, baking soda salt and whisk for one minute. Stir in vanilla and melted butter and mix.
- Add flour and oats and stir with a spoon or spatula until just combined. Then, fold in walnuts (optional).
- Divide batter evenly among muffin tins, fill about 3/4 full.
- Wipe mixing bowl and add crumble ingredients. Mash ingredients together with a fork until crumbly like wet sand. Generously top muffins with the mixture.
- Bake for 17 to 22 minutes or until golden brown and a toothpick/knife comes out clean. Let cool, remove from muffin tin and serve warm.
