Vegan Irish Soda Bread
Unsweetened Soy Milk
Whole Wheat Flour
Currants or Raisins
Preheat oven to 350 degrees Fahrenheit. Lightly grease a baking sheet.
In a small mixing bowl, combine soy milk and lemon juice.
In a large mixing bowl, stir flours, sugar, baking soda and salt. Then cut vegan margarine into the dry mixture.
Create a well with the dry mixture, then pour in soy milk and currants or raisins.
On a floured surface, gently knead the mixture until it comes together, 10-15 turns. Be sure not to overwork the dough.
Shape the dough into a disc that’s roughly 1 1/2 inches in height. Bake on cookie sheet for 40-45 minutes.
