Vanilla Ice Cream
Cut rhubarb stalks into small 1/2-inch pieces.
Bring strawberries, rhubarb, sugar, and 1/4 cup water to a simmer in large saucepan.
Stir occasionally until rhubarb starts to break down for 6-8 minutes.
Refrigerate for at least 1 hour and up to 1 week.
Pour strawberry-rhubarb mixture over scoops of ice cream.
Serve with shortbread, if desired.
