Raid-the-Fridge Fried Rice
A traditional Asian dish, fried rice has become popular all over the world. It’s quick, easy and gives you the chance to use up any leftovers you have in the fridge—vegetables, rice, even meat. If you want, you can also substitute cooked pork or beef for chicken.

Ingredients

  • 3/4cup


    Chopped Vegetablesmushroom, broccoli, cauliflower, carrot, etc

  • 2cloves


    Minced Garlic

  • 2tbsp


    Canola Oil

  • 3cups


    Cooked White or Brown Rice

  • 1cup


    Chickencut into cubes

  • 4tbsp


    Soy Sauce

  • 2whole


    Eggslightly beaten

  • 3large


    Green Onionsthinly sliced
Instructions
  1. Heat oil in a large skillet or wok, and stir-fry vegetables and garlic until tender.
  2. Stir in the rice, chicken and soy sauce, and cook over low heat for 8-10 minutes, stirring occasionally.
  3. Add eggs and onion, cooking and stirring for 1-2 minutes, or until eggs set.
  4. Garnish with reserved sliced green onion.
