Mango-Lime Ricotta Parfaits

Ingredients

ripe
Mangos
peeled, pitted, and cubed

Sugar
1/2
tsp
Lime Zest
grated

tbsp
Fresh Squeezed Lime Juice
1 1/2
cups
Part-Skim Ricotta
Instructions
In a bowl, toss together mangoes, sugar, lime zest, and fresh squeezed lime juice.
Let the mags mixture stand 20 for minutes.
In a separate bowl place the 1 1/2 cups of ricotta.
Top the ricotta with mango mixture, and serve.
