Cilantro-Lime Crab Salad
Between the creamy avocado, lump crabmeat and fresh lime juice, this leftover-turned-gourmet-lunch bursts with flavor.

Ingredients

  • 1/3cup


    Red Onionchopped

  • 3tbsp


    Mayonnaise

  • 2tbsp


    Cilantrochopped

  • 3tsp


    Lime Juicefresh squeezed

  • 1/2tsp


    Lime Zest

  • 8oz


    Lump Crabmeat

  • 1ripe


    Avocadohalved and pitted



  • Lime Wedges



  • Salt & Pepperto taste
Instructions
  1. In a bowl, mix together red onion, mayonnaise, cilantro, 2 teaspoons lime juice, cumin and lime zest.
  2. Mix in crabmeat.
  3. Season salad with salt and pepper.
  4. Brush avocado halves with remaining 1 teaspoon lime juice.
  5. Arrange avocado halves, cut side up, on plates. Mound crab salad on each avocado half.
  6. Serve salad with fresh lime wedges.
