Cilantro Lime Chicken Kabobs

Ingredients

  • 1/2cup


    Coarsely Chopped Cilantro

  • 6Juiced


    Limes

  • 1/2cup


    Extra-Virgin Olive Oil

  • 4cloves


    Peeled Garlic

  • 1tbsp


    Dark Brown Sugar

  • 2tsp


    Kosher Salt

  • 1 1/2tsp


    Ground Cumin

  • 3/4tsp


    Crushed Red Pepper Flakes

  • 2lbs


    Boneless Chicken Thighscut into cubes

  • 1large


    Red Bell Pepperstemmed, seeded, and cut into 1 1/2 inch thick

  • 1large


    Green Bell Pepperstemmed, seeded, and cut into 1 1/2 inch thick

  • 1large


    White Onioncut into 1 1/2 inch cubes and separated into 3-layer segments

  • 1pck


    Wooden Skewerssoaked in water for 30 minutes
Instructions
  1. Mix cilantro, lime juice, olive oil, garlic, brown sugar, salt, cumin, and crushed red pepper in the jar of a blender. Pureé until smooth.
  2. Place chicken cubes in a large resealable plastic bag. Pour in marinade and seal bag, removing as much air as possible. Marinate in the refrigerator for 1-5 hours.
  3. Thread chicken onto skewers, alternating with peppers and onions.
  4. Light the grill and set cooking grate in place, cover grill and allow to preheat for 5 minutes.
  5. Grill skewers until well browned on all sides and center of chicken registers between 160-165°F, about 3-4 minutes per side.
  6. Transfer skewers to platter and let cool for 5 minutes before serving.
