Ingredients

    Vegetable Broth

    Heavy Cream

Instructions
  1. Heat a pot over medium heat, then add butter or oil. Add chopped onion and cook until translucent, 5-7 minutes.
  2. Chop zucchini into 1-inch cubes. Add zucchini and vegetable broth to onion, bring to a boil, then simmer for 15 minutes or until zucchini is tender. Let cool.
  3. Working in small batches, puree soup in a blender until smooth.
  4. Cover and chill until cold.
  5. Stir in cream, and season with salt and pepper before serving.
