Oatmeal can be a breakfast go-to, but it’s not the easiest thing to munch on if you’re running out the door. Skip the bowl and spoon with this baked oatmeal alternative.

Ingredients
Baked Oatmeal Muffins

  • 2whole


    Eggs

  • 1/4cup


    Coconut Oil

  • 1cup


    Brown Sugarpacked

  • 1/2cup


    Applesauce

  • 1 1/2cup


    Milk

  • 2tsp


    Vanilla Extract

  • 1/2tsp


    Salt

  • 1tbsp


    Cinnamon

  • 3cups


    Old Fashioned Oats

  • 2tsp


    Baking Powder
Additional Topping

  • 2tsp


    Nuts

  • 2tsp


    Dried Cranberries

  • 2tsp


    Fresh Berries

  • 2tsp


    Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees. Prepare muffin tin by spraying each cup lightly with oil or lining with paper liners.
  2. In a big bowl, whisk eggs, oil and brown sugar until combined. Add applesauce, milk, vanilla, salt and cinnamon. Whisk until combined. Stir in oats and baking powder.
  3. Fill muffin tins with ¼ cup of the oat mixture.
  4. Sprinkle with your favorite toppings such as nuts, dried cranberries, fresh berries or chocolate chips and gently push the toppings down into the batter with a spoon.
  5. Bake for 25-30 minutes, until a tester comes out clean.
