Avocado And Egg Toast With Goat Cheese And Honey
A fried egg and toast is as traditional as it gets when it comes to breakfast. In fact, the combination is so traditional that the English can’t agree what to call it – is it a Toad in the Hole or an Egg in the Nest? It doesn’t matter. It’s simply delicious.

Ingredients

  • 2slices


    Whole Grain Bread

  • 1/2


    Avocadopeeled & pitted

  • 2oz


    Goat Cheese

  • 1tsp


    Honey

  • 1tsp


    Lemon Zest

  • 2


    Eggs



  • Salt & Pepperto taste



  • Extra-Virgin Olive Oilto taste
Instructions
  1. Lightly mash avocado in a bowl with a fork. Add salt and pepper.
  2. Cook 1-2 eggs to your liking –fried or poached work best. Meanwhile, toast the whole grain bread.
  3. Spread the mashed avocado over the toasted bread, top with crumbled goat cheese and drizzle with honey.
  4. Top each piece of toast with an egg.
  5. Finish with a drizzle of olive oil and a pinch of lemon zest.
