Apple Parsnip Mash
A sweet, reduced-calorie alternative to traditional (read: boring) mashed potatoes, apple parsnip mash from Martha Stewart is a great side dish.

Ingredients

Parsnips
peeled & cut into 1/2″ chunks

Apples
peeled, cored, & cut into ½” chunks

cup
Water

tbsp
Unsalted Butter
1
pinch
Coarse Salt
1
pinch
Ground Black Pepper
Instructions
Combine parsnips, apples and water in a medium saucepan.
Cover and boil over medium-high heat.
Reduce heat to medium and continue to cook uncovered about 25 to 30 minutes, until parsnips are tender.
Transfer to a food processor and add butter.
Process until smooth, and season with salt and pepper.
