Apple Parsnip Mash
A sweet, reduced-calorie alternative to traditional (read: boring) mashed potatoes, apple parsnip mash from Martha Stewart is a great side dish.

Ingredients

  • 1lb


    Parsnipspeeled & cut into 1/2″ chunks

  • 1lb


    Applespeeled, cored, & cut into ½” chunks

  • 1cup


    Water

  • 1tbsp


    Unsalted Butter

  • 1pinch


    Coarse Salt

  • 1pinch


    Ground Black Pepper
Instructions
  1. Combine parsnips, apples and water in a medium saucepan.
  2. Cover and boil over medium-high heat.
  3. Reduce heat to medium and continue to cook uncovered about 25 to 30 minutes, until parsnips are tender.
  4. Transfer to a food processor and add butter.
  5. Process until smooth, and season with salt and pepper.
