- Preheat oven to 350 degrees. Prepare muffin tin by spraying each cup lightly with oil or lining with paper liners.
- In a big bowl, whisk eggs, oil and brown sugar until combined. Add applesauce, milk, vanilla, salt and cinnamon. Whisk until combined. Stir in oats and baking powder.
- Fill muffin tins with ¼ cup of the oat mixture.
- Sprinkle with your favorite toppings such as nuts, dried cranberries, fresh berries or chocolate chips and gently push the toppings down into the batter with a spoon.
- Bake for 25-30 minutes, until a tester comes out clean.

- Preheat oven to 375 degrees.
- Prepare muffin tins by lightly coating with cooking oil.
- Cut bacon strips into two pieces, then lay in a criss-cross pattern in each tin.
- Crack an egg into each tin.
- Season with salt and pepper, and add a sprinkle of grated cheese.
- Cook 13 to 17 minutes until eggs are cooked to your liking.
- Once cool, store in airtight container or freeze.
These muffins are ripe with possibility. Go vegetarian – just sauté your favorite veggies until crisp-tender and add to the muffin tins, omitting the bacon. You can also substitute breakfast sausage for the bacon. Cook crumbled sausage (chop links into pieces) until brown, then add to tins before cracking an egg on top.

- Preheat oven to 350 degrees.
- Lightly grease muffin tin cups.
- Prepare taco meat by browning your ground beef in a pan then drain the grease. Add 2/3 cup of water and stir in taco seasoning. Let meat simmer for a few minutes
- Use a pastry cutter (or DIY it with a pizza cutter and a standard margarita glass) to cut four-inch diameter circles out the flour tortillas.
- Wrap three to four circles in a wet paper towel and microwave for 30 seconds to soften them, then mold circles into lightly greased muffin tin cups.
- Add a layer of shredded cheese, two tablespoons of meat and another sprinkle of cheese.
- Bake for 20 minutes until cheese is lightly browned.
- Top with your favorite garnishes like lettuce, tomato, guacamole, sour cream and salsa.
You can bake the leftovers if you have extra tortilla chips around – just lightly coat with oil, sprinkle with salt and bake at 350 until crisp and beginning to color.

- Preheat oven to 350 degrees.
- Mix spaghetti and butter.
- Whisk eggs in separate bowl, adding Parmesan as you whisk.
- Combine egg mixture to spaghetti mixture and combine.

- Preheat oven to 400 degrees.
- Put one inch of water into saucepan and bring to a boil.
- Add broccoli, covering and reducing heat to medium.
- Cook five to six minutes until tender (broccoli should pierce easily with a fork).
- Drain and allow to cool, then squeeze broccoli with paper towels to remove as much water as possible.
- Finely chop the broccoli.
- In a bowl, combine all ingredients, seasoning with salt and pepper.
- Lightly grease muffin tin, then fill the cups with the broccoli mixture.
- Press the broccoli mixture down so it’s compacted.
- Bake 18 to 20 minutes until golden brown.

- Heat the olive oil over medium-high heat in a large nonstick skillet. Add chopped onion, carrot, dried oregano and minced garlic and sauté for two minutes.
