            Pie Crust
            1. Preheat oven to 400 degrees.
            2. In large bowl, combine flour, sugar and salt.
            3. Using a pastry cutter, cut in butter until crumbly. Butter should resemble small peas. Gradually add water and vanilla to flour mix, blending with a fork until the dough forms a ball.
            4. Cover and refrigerate 30 minutes. Alternately, use a prepared pie crust and move on to the next step.
            Filling
            1. On a floured surface, roll dough into a 10” circle.
            2. Transfer to a baking sheet lined with parchment paper.
            3. Combine filling ingredients and spoon over pastry, leaving about two inches on the outside.
            4. Fold edges of pastry over filling, leaving the center uncovered.
            Finishing & Topping
            1. Combine sugar and cinnamon and sprinkle over the filling.
            2. Bake 25 to 30 minutes until crust is golden and filling is bubbly.
            3. Slide onto a cooling rack and drizzle with caramel.
